Whisk the eggs and sugar together.
Add melted butter slowly and stir to incorporate.
Add 1/2 cup of wheat flour and stir into wet ingredients.
Add 1/3 cup of milk and stir in.
Add remaining 1/2 cup of wheat flour and stir in.
Add 1/3 cup milk and stir.
Add all purpose flour, stir in.
Add last 1/3 cup of milk and stir in.
Add baking powder, vanilla and salt and mix well.
Heat large skillet or griddle over medium heat.
Using some of the remaining 2 tablespoons of butter, rub the skillet or griddle with the butter to lightly coat the surface.
Use 1/4 cup measuring cup to pour out pancakes 3-4 inches in diameter.
When bubble have formed on the top of the pancakes, flip.
Cook 1 more minute on bottom and set aside. Cook remaining batter.
Serve with butter and maple syrup.
