Ingredients
Peeled and cubed butternut squash
Apple
Onion
Brocoli
 

Instructions
Heat oven to 450. Line a baking sheet with foil. Spray. Dice apples, squash (to make same size as apple), onion, and cut brocoli into florets. Place on pan and drizzle with a bit of olive oil. Season with garlic powder, salt, pepper, and cinnamon (optional- tastes good though). Roast for about 20 minutes or until browned but not charred.
Sometimes if this seems dry I eat it with a bit of non fat Greek yogurt. Roasting brings out the sweetness of veggies. You may want to microwave the butternut squash for about 2 minutes prior to roasting, because sometimes it doesn't cook as fast as the other veggies.
Serving Suggestions
I add this as a topper to salad. Tastes great leftover and cold.
