     Mamma Jean's Carrot Cake

Ingredients
2 cups of flour
2 teaspoon baking powder
1.5 teaspoon soda
1 teaspoon salt
2 teaspoon cinnamon
2 cups sugar
1.5 cup oil
4 eggs
2 cups gratted carrot
 
1 can 8 oz crushed pineapple
3 oz coconut

Instructions
Mix flour, baking powder, soda, salt, cinnamon and sugar.
Add oil and eggs, mixing well. Then mix with carrots, pineapple and coconut.
Put in baking pan, greased and floured.
Bake at 350 degrees for 40 to 45 minutes. Let cool then ice with cream cheese frosting. (2 tbls may, 1 sm cream chees, 1/2 stick butter and confec sugar)
