     Cheesy Potato and Ham Soup

Ingredients
2 C. Water
2 C. Diced Potatoes
1. C. Diced Carrots
1/4 C. Chopped Onion
1 tsp Salt
1/4 tsp Pepper
2 Tbls Butter
1/4 C. Flour
2 C. Milk
 
2. C. Grated Cheddar Cheese
1. C Cubed Ham

Instructions
Combine water, vegetables, salt & pepper in a large kettle. Boil for 10-12 minutes. Meanwhile, in a small saucepan, make white sauce by melting butter, add flour and stir until smooth (about 1 min.) Slowly add milk; cook until thickened. Add cheese, stir until melted. Add white sauce and cubed ham to vegetables that have NOT been drained. Heat Through.
Variations- add 1/2 C. celery; use green onions; use any cheese you have around. Serve with oyster crackers.
