9 SHEETS OF CHOCOLATE GRAHAM CRACKERS
2 TABLESPOONS SUGAR + 1 1/2 CUPS SUGAR
2 TABLESPOONS BUTTER MELTED
4 PACKAGES (8 OZ) CREAM CHEESE ROOM TEMP.
1 CUP LIQUID EGG SUBSTITUTE
1 CONTAINER (8 OZ) REDUCED-FAT SOUR CREAM
2 TABLESPOONS CORNSTARCH
1 CAN CHERRY PIE FILLING
1 TEASPOON VANILLA
 
325 DEGREES 1 HOUR 20 MINUTES
STAND IN OVEN 1 HOUR

Instructions
POSITION RACKS IN CENTER AND LOWER PART OF OVEN. FILL A ROASTING PAN 1/2 FULL WITH WATER. PLACE IT ON BOTTOM OF OVEN. PREHEAT OVEN 325 DEGREES. COAT 9" SPRINGFORM PAN WITH COOKING SPRAY. GRIND GRAHAMS WITH 2 TABLESPOONS SUGAR. STIR IN BUTTER AND 2 TABLESPOONS WATER. PRESS INTO BOTTOM OF SPRING PAN. AT MEDIUM SPEED, BEAT CREAM CHEESE AND REMAINING SUGAR UNTIL FLUFFY. BEAT IN EGG SUBSTITUTE, SOUR CREAM, CORNSTARCH AND VANILLA UNTIL BLENDED. POUR INTO CRUST. BAKE ON CENTER OVEN RACK FOR 1 HOUR AND 20 MINUTES OR UNTIL CENTER JIGGLES SLIGHTLY. TURN OVEN OFF. LET CHEESCAKE STAND IN OVEN 1 HOUR WITH DOOR CLOSED. REMOVE FROM OVEN RUN KNIFE AROUND EDGE. COOL. CHILL OVERNIGHT. TOP WITH FILLING
