     Zucchini Cakes

Ingredients
3 med zucchini, shredded (about 4 1/2 cups)
1 tsp. salt
2 eggs, beaten
1 small onion, grated
1/4 cup bread crumbs
Pepper
Oil
 

Instructions
Shred zucchini and spinkle with salt. Lay it out on a clean kitchen towel. Let sit for 10 minutes. Roll up in towel and ring it out.
Stir in eggs, onion, salt, pepper, and bread crumbs.
Drop in hot oil and flatten out. Fry until golden brown on each side.
