Combine all ingredients except for the gravy. form into three patties, about 1 inch thick and set on a plate. Place in the refrigerator for about 30 minutes for flavors to blend and patties to firm up. Heat skillet over medium heat. When hot, add patties and brown on one side. When brown, flip and immediately reduce heat. When skillet has cooled just a bit, pour in gravy and season liberally with more pepper. Gently stir pepper into the gravy without sdisturbing patties too much. Cover and slowly simmer for 30 minutes.
