Brown rice on stovetop- Bring 1 1/2 cups of water to a boil. Add 1 cup of brown rice, reduce heat, and cover for 50 minutes. Do not lift lid while rice is steaming.

Dice tofu into squares and fry with a little oil. Chop bok choy into medium sized pieces and set aside.

|
Mix peanut butter, soy sauce, and lime juice. Mix until thick, but creamy consistency.
|
|
|
Add bok choy to fired tofu and sautee for a few miniutes until greens are slightly wilted. Add peanut sauce to coat the tofu & greens. Heat mixture until sauce thins and covers tofu & greens. Add more elements of the sauce to taste and desired consistency.

Serve poured over brown or white rice. Sauce can also be used with stir fry (broccoli, carrots, snap peas, mushrooms)
