1/2 cup of prepared rice (you can use brown but I use white)
1/2 lb of lean ground turkey (I used 10 oz)
1 tsp Italian seasoning
1/2 cup chopped onion
1/2 cup grated parmesan
1 15 ounce can diced tomatoes
2 cups mozarella shredded
4 red bell peppers, tops removed, cored and seeded
non stick cooking spray
Instructions
Cook 1/4 cup of rice to make 1/2 cup prepared.
In a large mixing bowl, combine cooked rice, turkey,
seasoning, onion, parmesan, 1/4 cup tomatoes, and 1
cup mozzarella. Fill peppers with rice mixture.
Coat the inside of a slow cooker with cooking spray
and placefilled peppers upright in cooker. Spoon
remaining tomatoes over and between eppers; top each
pepper with 1/4 cup mozzarella.
Cook on low 8 hrs
