Heat oil in lg pot over med heat. Add the onions and garlic. Saute until soft. About 6 min. Add squash carrots celery ginger red pepper and saffron if using. Saute 5 min. Add broth tomatoes and juice lentils and cinnamon stick salt and pepper. Bring to a boil. Reduce heat and simmer covered for 1 hour stirring occasionally. Remove cinnamon stick.
