     Cream of Broccoli Soup

Ingredients
1(15-oz) can chicken broth
1(16-oz) pkg. frozen broccoli (WIC food)
2 cups milk (WIC food)
1/4 cup cornstarch
2 cups Velveeta cheese, (cubed)
1cup half &half cream or 1cup milk (WIC food)
 

Instructions
Cook broccoli in chicken broth. Do not drain. Mix together cornstarch and 2 cups of milk. Add milk and cornstarch mixture to cooked broccoli and broth. Add cubed cheese to above mixture. When cheese has melted, add the half&half or the milk. Cook over low to medium heat and stir until hot and mixture thickens.
Serving Suggestions
Serve with fresh fruits and veggies. Also good served with peanut and crackers.
