put onion in bottom of crock pot and layer frozen
chicken on top. Add rotel, canned tomatoes,
jalapeno, zucchini, tomato paste, and broth. Cook on
low 6-8 hours.
Remove chicken and shredded meat, returing to crock
pot. Add beans and corn. Cook additional 20-30
minutes. Stir in cilantro.
Ladle soup into bowls or mugs. Top with green onion
and whatever additional toppings you like (salsa,
sour cream, guacamole). Serve with tortilla chips.
