     Carrot Casserole

4 cups carrots, sliced
3 T. butter
1 can cream of celery soup
dash of pepper
1/2 cup diced cheese, opt
1/2 cup melted butter
1 medium onion, chopped
1/2 tsp. salt
3 cups herb flavored croutons

Cook carrots in salted water until tender. Saute onion in butter. Combine carrots, onion, soup, seasonings and cheese. Put in baking dish. Top with croutons tossed in the melted butter. Bake at 350 F until heated through and topping is browned. Note- in place of celery soup, try cheddar cheese soup and omit diced cheese. This is also good with soda crackers on top instead of croutons.
