     Roasted Cauliflower or Brussel Sprouts

Ingredients
1 large head of cauliflower or 1&1/2 lbs. of brussel sprouts ( both WIC foods)
2 tablespoons olive oil or canola oil
salt and black peppetr
 

Instructions
Preheat oven to 400 degrees. Cut off the brown ends of the brussel sprouts, remove any yellow outer leaves and rinse sprouts. Rinse cauliflower and cut into small pieces. Place cauliflower or brussel sprouts in a bowl. Sprinkle with oil, salt and pepper. Toss to coat. Place vegetables on a baking sheet and bake. For brussel spouts bake for approximately 35 to 40 mins or cauliflower for 20 mins. Stir veggies a couple times while roasting so they brown evenly.
