     Profiterole au Chocolat

Category   Desserts - Breads
Sub Category   None
Servings   30

Ingredients
1 cup All-Purpose Flour
1/2 cup Milk
1/2 cup Water
1/4 cup Unsalted Butter
1 tsp. Sugar
1/4 tsp. Salt
4-5 Eggs
1/2 cup Semi-sweet Chocolate
1/4 cup Double Cream

Instructions
-In a sauce pan, add the butter, milk, and water. On medium heat, bring it to a boil. -Add the flour, sugar, and salt into a mixing bowl and mix well. -When the milk mixture is boiling take it off the stove and add the flour mixture while still hot. -Stir until its warm and not hot and stir until its all combined. [You can test the hotness by using the back of your fingers or else eggs will cook and not mix]
-Add an egg 1 at a time making sure the pastry absorbs the egg throughly. [If the pastry dough does not absorb the egg throughly before adding another egg, the pastry will turn liquidy and will not turn out right] -After the egg is mixed throughly, add another egg and repeat the steps.
-[You can use a disposable pastry bag or ziploc bag]; Add the pastry dough into the bag and cut a hole in the corner of the bag. -On a peice of parchment paper, sqeeze the pastry out slowly into a form of a O, about 2 inches wide and pull away. [You know you did it right if it looks like a whip] -Pre-heat the oven to 400 degrees. -Add the tray of Profiterole pastry in the oven for 20 minutes and change it to 375 degrees for 10 minutes.
