     Creole Beans

Ingredients
1/2 cup celery, sliced (WIC food)
1/2 cup green onion, coarsely chopped (WIC food)
1/2 cup green pepper, coarsely chopped (WIC food)
2 tsp margarine
16oz can tomatoes (WIC food)
1/4 tsp garlic powder
dash of pepper
2 1/2 cups dry navy beans, cooked, unsalted, drained (WIC food)
note- 2 1/2 cups canned navy beans can be used in place of cooked dry beans
 

Instructions
Cook celery, onion and green pepper in margarine until tender, about 5 minutes. Break up large pieces of tomatoes. Add tomatoes and seasonings to cooked vegetables. Bring to boil. Add beans; return to a boil. Reduce heat, cover, and boil gently until flavors are blended and liquid is reduced, about 30 minutes. Stir occasionally to prevent sticking.
