Beat the eggs with salt and pepper until yolk and white are combined. Heat 2 Tbsp vegetable oil in frying pan over medium heat. Add eggs. Cook and stir until eggs are solid and scrambled but not dry. Remove eggs and clean pan. Heat 2 Tbsp vegetable oil in pan over medium-high heat. Add rice. Cook and stir for 2-3 minutes until heated through. Stir in soy sauce as desired. Add scrambled eggs back into pan. Mix throroughly Stir in green onion and heat completely.
