     Turkey Mole Enchiladas

Ingredients
6 dried ancho chies (see note at bottom) or 1 tbl ancho chili powder
1 C plus 1 tbs canola oil
1 md onion chopped
6 garlic cloves , chopped
1/2 ripe banana
1/2 C roasted pepitas (hulled pumpkin seeds)
1/2 tsp cinnamon
1/4 tsp allspice
1/4 tsp corriander
 
kosher salt and pepper
1/2 semisweet choclate chips
12 small corn tortillas
2 C shredded cooked turkey or chicken
2 C monterey jack cheese
1 14.5 oz can diced tomatoes

Instructions
Heat oven to 350 ...Heat 1 tbl oil in skillet , add onion and cook covered stirring occasionally until tender 6 to 8 minutes. Add the garlic and cook stirring for 2 min. transfer the onion mixture to a blender (reserve the skillet).... add the tomatoes,banana, pepitas, chiles or chili powder, cinnamon, allspice,coriandr,salt and pepper and 1/2 C water (or chili cooking liquid if using)....Blend until smooth
Return the mixture to the skillet, stir in the chocolate and 1 1/2 C water and simmer until the chocolate has melted and the mixture has slightly thickened 8-10 minutes. keep warm
warm the tortillas... Spread 1/2 C of the warm sauce in small baking dish....In a bowl combine the turkey, 1/2 C sauce and 1 C cheese. Roll the turkey mixture in the tortillas and place seam side down in the dish. Top with the remaining sauce and cheese. Bake until the cheese is melted and the filling is heated through....20-25 min. Top with pepitas before serving
Note for chilies....If using dried ancho chilie..first stem and seed them. Place the chilies in a med saucepan . cover with water and simmer until tender about 5 min....Drain, reserving the liquid. Place the chilies in the blender and use 1/2 C of the reserved liquid instead of the water
