     Scalloped Corn

Ingredients
1 (10oz) package frozen whole kernel corn (WIC food)
1/2 cup chopped onion (WIC food)
1/2 cup chopped green or red bell pepper, optional (WIC food)
2 slightly beaten eggs (WIC food)
1 can cream-style corn
1 1/2 cups coarsley crushed saltine crackers (about 30 crackers)
1 cup milk (WIC food)
2 Tbsp butter or margarine, melted
1/4 cup cheddar cheese, shredded (WIC food)
 

Instructions
Grease a 2qt baking dish; set aside. In a medium saucepan combine frozen corn, onion, pepper (if desired), 1/4 cup water and 1/4 tsp salt. Bring to boiling; reduce heat. Simmer, covered, about 5 minutes or until vegetables are crisp tender. Drain thoroughly.
Meanwhile, combine eggs, cream style corn, 1 cup of the crushed crackers, and milk. Stir in cooked vegetables. Transfer corn mixture to prepared baking dish. Combine the remaining 1/2 cup crushed crackers and melted butter; sprinkle over the corn mixture.
Bake in a 325 degree oven for 35-40 minutes or until a knife inserted near center comes out clean. If desired, sprinkle with cheese. Let stand 10 minutes before serving.
