     Black Bean Breakfast Quesadillas

Ingredients
1/2 can (12 oz) black beans (rinsed & drained)
1/2 cup shredded, reduced fat monterey jack cheese
1/2 jalapeño pepper (thinly sliced)
4 whole wheat tortillas
1 tsp olive oil
1/2 avocado
1/4 lime (cut into wedges)
 

Instructions
Preheat oven to 200F. Divide beans, cheese, and peppers evenly among 2 tortillas. Top with remaining tortillas.
Heat olive oil in skillet over medium high heat. Brown quesadillas.
