1/2 cup quinoa flour (or amaranth, millet, spelt, kamut)
2 cups rolled oats
1/2 cup oat bran
1/2 cup coarsely chopped flaxseed
1/2 cup wheat germ
1 tsp sea salt
1 tsp cinammon
1/4 tsp nutmeg
1/2 cup honey
1 cup dark chocolate (broken into pieces)
2 cups greek yogurt
1/4 cup canola oil
2 tsp EVOO
1 tsp vanilla
Instructions
Preheat oven to 350F. Coat 9x13 inch pan with cooking spray.
In mixing bowl combine protein powder, oats, flour, oat bran,
flaxseed, wheat germ, salt, cinnamon, nutmeg and honey. Stir
in chocolate pieces.
In different bowl mix yogurt cheese, oils, and vanilla. Mix well.
Add this to dry ingredients. Use hands to mix. (coat in olive oil
first)
Place mix in pan. Press it down and even out the top. Bake on
middle rack for 15 minutes. Remove and let cool. Cut into
bars. Place bars on a cookie sheet lined with parchment paper
and bake for another 15min (flip over onto opposite side as first time). Remove and
let cool. Store in fridge.
