     Cabbage Fennel Slaw

Ingredients
1/2 head red cabbage, thinly sliced
2 carrots, peeled, and cut in matchsticks
1 fennel bulb with stalks and fronds, sliced thinly
3 cloves garlic, minced
1/4 cup cilantro leaves
5 T seasoned rice vinegar
pinch of dried chili flakes
1 tsp sugar
pinch salt
 
1/2 cup cashews

Instructions
Toss cabbage, carrots, fennel, cilantro, and garlic in a large bowl.
Mix vinegar, sugar, salt, and red pepper flakes. Pour over the cabbage mix and toss.
Add a handful of cashews right before serving.
Mint leaves could be substituted for cilantro and you could mince a serrano chili and use instead of dried pepper flakes. Yummy any way.
