1/2 head red cabbage, thinly sliced

2 carrots, peeled, and cut in matchsticks
|

1 fennel bulb with stalks and fronds, sliced thinly
|

3 cloves garlic, minced
|
|
1/4 cup cilantro leaves
|
|
5 T seasoned rice vinegar
|
|
pinch of dried chili flakes
|
|
1 tsp sugar
|
|
pinch salt
|

Instructions |
|
|
Toss cabbage, carrots, fennel, cilantro, and garlic
in a large bowl.
|

|
Mix vinegar, sugar, salt, and red pepper flakes.
Pour over the cabbage mix and toss.
|
|
|
Add a handful of cashews right before serving.
|
|
|
Mint leaves could be substituted for cilantro and
you could mince a serrano chili and use instead of
dried pepper flakes. Yummy any way.
