     Gluten Free Grapefruit & Lemon Tea Cake

3T light cream cheese
3T butter, softened to room temperature
2 eggs
juice from 1/2 pink grapefruit (about half a cup)
1 tsp. vanilla
1 c sucanat
zest from one lemon (about 2 tsp.)
1 1/4 c almond meal
3/4 c brown rice flour
3 tsp. baking powder
1 tsp. salt

In medium mixing bowl, combine softened cream cheese, butter and sucanat. Cream together to combine.
Mix in eggs, vanilla, grapefruit juice and lemon zest until combined.
Add almond meal and rice flour, baking powder adn salt and mix to form batter. It is ok if small pockets of cream cheese or butter remain.
Pour batter into loaf pan lined with parchment paper and bake @ 350F convection for 20 minutes or until toothpick inserted in center comes away clean or 375F @ 30 minutes in standard oven. Let cool for 20 min. before slicing to serve. If desired, drizzle icing made of confectioners sugar and pink grapefruit juice combined with 1 tsp. lemon or grapefruit zest.
