     Panko Crusted Haddock

Ingredients
2-3 Fresh Haddock Fillets
Panko Bread Crumbs (plated)
1 Egg - 1 tbsp water, mixed
Flour (plated)
Canola oil
Mixed greens and spinach
1/4 cup toasted walnuts
1/4 cup dried cranberries
1 Bosc pear
 
1 ripened avocado
3 tbsp canola oil
4 tbsp of pure apple cider vinegar
1 big tbsp of Dijon mustard
1 little tbsp of brown sugar
1 tbsp of maple syrup
1 pinch thyme leaves
1 tsp minced fresh shallots

Instructions
For haddock- Heat 2 tbsp of canola oil over med heat. Dredge haddock fillets in flour, dip in egg mixture, then coat with Panko bread crumbs. Place in frying pan and cook for 3-4 minutes each side or until cooked through. Squeeze some lemon on top and serve hot.
My Favorite Salad and my Homemade Dressing Mixed Greens and Spinach ¼ cup of toasted walnuts ¼ cup dried cranberries 1 Bosc Pear 1 ripened avocado (tonight I also added some diced red peppers…) Make a salad with the ingredients above and add this great dressing 3 tbsp of canola oil 1 big tbsp of Dijon mustard 1 little tbsp. of brown sugar 1 tbsp of pure maple syrup 1 pinch of thyme leaves 1 tsp of minced fresh shallots As a side dish, we had long grain and wild rice.
