     Tomato-Basil Red Pepper Soup

Ingredients
2 T butter
4 scallions, thinly sliced
1 28oz can of diced tomatoes with liquid
1 3/4 C chicken broth
1 C chopped jarred roasted red bell peppers
3/4 t dried basil
3/4 C heavy cream
 

Instructions
Melt butter over medium-low heat in large saucepan. Add scallions and cook, stirring occasionally until scallions begin to soften. Stir in tomatoes, broth, peppers, basil and salt/pepper. Increase heat to high and bring mixture to a boil. Reduce heat and simmer, for 10 minutes.
Remove from heat, stir in heavy cream and season to taste.
Serving Suggestions
Try flavored olive oil instead of butter . . . or add 1 lb browned meat and add instead of butter.
