     Brazilian Pork Roast

Brazilian Pork Roast

Ingredients
MARINADE:
1 tsp. crushed dried thyme
1/2 tsp crushed dried oregano
1/2 tsp ground cumin
1 bay leaf
2 whole cloves
1/2 tsp ground pepper
3 tbls fresh lime juice
3 tbls fresh orange juice
 
1/2 tsp olive oil
GLAZE:
1 cup fresh orange juice
1tbls brown sugar
1/2 tsp ground cloves
3- 10oz pork tenderloins
12 flour tortillas - warmed

Instructions
Wisk together marinade ingredients. Brush onto the pork tenderloins and marinate overnight.
Preheat oven to 375 degrees. Bring glaze ingredients to a boil and reduce heat and stir until it has the consistancy of maple syrup. Brush each tenderloin with the glaze and bake in a covered roasting pan for 1 hour and 30 minutes. Baste two more times during cook time.
Allow meat to rest 10 minutes.
Slice tenderloins and serve with warmed tortillas and rice.
