     Fai Kakai (Delicious Golden Syrup Dumplings)

Ingredients
1 Cup (125g) Self-Raising Flour
40g Unsalted Butter, chopped
1 Egg
1 Tablespoon Milk or Coconut Milk
Pinch of Salt
Syrup-
1 Cup (250g) Sugar
40g Unsalted Butter
2 Tablespoons Golden Syrup
 
Quarter Cup Lemon Juice

Instructions
Sift the flour and a pinch of salt into a bowl. Rub in the butter until fine and crumbly, and make a well using a flat-bladed knife, stir in the combined egg and milk to form a soft dough.
Put the syrup ingredients in a pan with 2 cups of water and stir over medium heat until the sugar has dissolved.
Bring to the boil, then gently drop dessertspoons of the dough into the syrup.
Cover and reduce the heat to simmer for 20 minutes, or until a knife inserted into a dumpling comes out clean.
Serving Suggestions
Can be served with cream, or just by itself.
