     Dill and Mustard Dressing

Ingredients
2 tablespoons water
1 tablespoon white sugar
2 tablespoons Dijon mustard
1 clove garlic, crushed
¼ cup 960ml) white wine vinegar
1 cup (250ml) olive or peanut oil
1 tablespoon finely chopped fresh dill
 

Instructions
METHOD- 1. Combine sugar land water in a small saucepan. Stir over low heat until sugar has dissolved, remove from heat, or micro-wave on medium until sugar has dissolved, stirring occasionally.
2. Using a balloon whisk, whisk the mustard and garlic in a medium bowl until combined. Add the vinegar and sugar syrup, whisk until combined.
3. Add the oil a few drops at a time, whisking constantly. When the mixture begins to thickened add the oil in a thin, steady stream, whisking constantly until dressing has thickened slightly. Whisk in dill.
4. Pour into a sterilised glass jar and store in the refrigerator. Shake well before using
Serving Suggestions
A great dressing to serve with fish.
