     Baked APples with DoSiDo streusel

Ingredients
6 granny smith apples
1 c butter, softened
1 c light brown sugar
2 c flour
12/ c DoSiDos, roughly chopped
1 1/2 c dried cherries, finely chopped, divided
apple cider
1 T cornstarch
6 t DoSiDos, finely chopped
 

Instructions
Oven to 350 degrees. Wash apples, evenly slice bottoms off. Core the apples. Peel the top half off the apples, leaving the lower half of hte peel intact. Place apples in a shallow baking dish. For Streusel- Cream the butter and brown sugar together. Add flour and mix until the streusel starts to come together (it will look crumbly). Stir in 1/2 c of the DoSiDos adn 1/2 c of the dried chopped cherries. For baked apples- divide the streusel evenly among hte apples. Add enough apple cider to the dish to measure 1/2 inch deep. Cover with foil and bake for 20 min, or until the apples are nearly tender when pierced with a fork. Uncover apples and bake another 30 min. Using a pastry brush or squeeze bottle, baste the side3s of the apples with the apple cider in the bottom of hte pan frequently (Do ont baste the tops of the apples as this will make the streusel gummy). When done, remove apples from baking dish and keep warm.
For cider sauce- Add 1 t cornstarch to a small amount of apple cider, whisking well to prevent lumps. Add mixture to about 1 c of the apple cider used to cook the apples. Add the remaining dried cherries. Cook the mixture until it boils. This should tighten the cider, forming a sauce. Serve apples with apple cider sauce and garnish with the finely chopped DoSiDos.
