Sautee onion in olive oil until soft. Add diced potatoes and
carrots. Don't stir. Sautee two minutes. Add
zucchini. Don't stir. Sautee one more minute. Now
stir, lower heat, add red pepper, celery, spices.
Stir well.
Add water to cover. Add chickpeas. Mix.
Add sweet potatoes, squash. Don't mix. Cover and
simmer until all vegetables are soft, about two
hours.
