     Yona's Couscous Stew

Ingredients
2 medium onions, diced
2 potatoes, peeled diced
3 carrots, peeled and diced
2 zucchinis, quartered lengthwise, then sliced
2 red peppers, chopped
1 rib celery, diced
2 cups cooked chickpeas (or one can)
2 large sweet potatoes, peeled and diced
1 large squash, peeled and diced
 
3 T paprika
2T chicken soup mix
1T salt
2 T black pepper

Instructions
Sautee onion in olive oil until soft. Add diced potatoes and carrots. Don't stir. Sautee two minutes. Add zucchini. Don't stir. Sautee one more minute. Now stir, lower heat, add red pepper, celery, spices.
Stir well.
Add water to cover. Add chickpeas. Mix.
Add sweet potatoes, squash. Don't mix. Cover and simmer until all vegetables are soft, about two hours.
Serving Suggestions
Serve over couscous
