Let dough rise until doubled, according to package. Roll each loaf into a 15 X 12 rectangle. Arrange a 1/4 salami, ham, pepperoni and provolone over each rectangle. Sprinkle with a 1/4 of remaining ingredients (except egg yolk).
Roll up each jelly-roll style beginning with a long side. Seal seams and ends. Place seam side down on two greased cookie sheets. Brush with egg yolk.
Bake at 375 degrees 25-30 minutes or until golden brown. Let stand for 5 minutes before slicing. Serve warm with spaghetti sauce if desired.
