     Whole Wheat Soft Pretzel Bites

Ingredients
1.5 cups warm water (110-115 degrees, think bath water temperature)
2 Tablespoons honey
2.25 teaspoons dry active yeast (one package)
6 Tablespoons butter, melted
1 teaspoon kosher salt
4.5 cups white whole wheat flour (plus extra if needed to reach desired dough texture)
3 quarts water
0.75 cups baking soda
1 medium egg beaten with 1 Tablespoon cold water
 
coarse salt for sprinkling (sea or kosher)
mustard for dipping

Instructions
In a large bowl (or stand mixer) mix together warm water, honey, yeast, and butter. Let stand about 5 minutes until yeast starts to bubble. Add salt and flour and mix until dough comes together. Turn out onto a floured surface and knead 4-5 minutes until smooth and elastic, adding additional flour if necessary. You can also knead with a dough hook in a stand mixer. Place dough in a large, greased bowl (I like to use butter) and cover with a clean towel. Allow to rise in a draft free place (I stick mine in my microwave or oven if it is a chilly day) for about one hour until doubled in size.
Preheat oven to 425 degrees. Meanwhile, bring 3 quarts of water to a boil in a large pot. Stir in baking soda and lower heat slightly. Divide dough into 8 equal pieces. Roll each piece into a long rope about 12-18 inches long and about 1.5 inches thick. Cut the rope into one inch pieces and place into boiling water in batches. Boil for about 30 seconds and remove with a slotted spoon. Place on a baking sheet prepared with parchment paper. Be sure pretzel bites are not touching, brush with egg wash, and sprinkle with coarse salt. Bake for 18-20 minutes until nicely browned. Cool on a baking rack for a few minutes, and then serve with your favorite mustard. {Note- I doubt you’ll have any left if you serve these to a group. But if you do, they can be stored in a zipper storage bag or other air tight container at room temperature for 3-4 days.}
Freezing Directions- Bake as directed above except do not sprinkle with salt. Cool and flash freeze pretzel bites, then store in a freezer bag. To serve- Moisten frozen pretzel bites with wet fingers, sprinkle with coarse salt, and microwave for one minute or until warm. Serve with your favorite mustard.
