Wash baking potatoes. Bake @ 350 for about 45-60 min until tender when pierced with a fork.
Cool slightly, cut in half lengthwise, scoop out potatoes. Place in bowl.
Mash potatoes with electric hand mixer. Add butter (1 stick or so). Heat 1-2 cups of milk in microwave. While mixing add hot milk to potatoes little by little. (Hint from Grandma-the more milk, the creamier). Add seasoning to taste.
Spoon potatoes back into peels. Garnish with grated cheese. Bake @ 350 until cheese is melted and potatoes are heated through.
