In large pot, add enough water to cover chicken. Add parsley, celery, carrot, onion, salt and pepper, bay leaf. Cover, bring to boil, turn down to simmer and cook for 2 1/2 hours.
Remove skin from chicken. Place chicken on platter, keep warm in oven. Strain the broth into a large bowl, Make Bisquick dumplings, cook in broth, spoon over chicken on platter. If broth isn't thick enough add a little flour.

HINT-
it is not necessary to chop up the carrot, celery, onion. Just throw them in the pot. I don't peel the onion, the skin colors the broth. This is all just for flavor, you will not be serving with the chicken.
