     CHICKEN AND DUMPLINS

Ingredients
1 chicken, cut into pieces, or 6 chicken breasts,
2 Tbls parsley or 2 sprigs fresh
4 celery stalks with ribs
1 carrot
1 small onion
2 tsp salt
1/4 tsp black pepper
1 bay leaf
 

Instructions
In large pot, add enough water to cover chicken. Add parsley, celery, carrot, onion, salt and pepper, bay leaf. Cover, bring to boil, turn down to simmer and cook for 2 1/2 hours. Remove skin from chicken. Place chicken on platter, keep warm in oven. Strain the broth into a large bowl, Make Bisquick dumplings, cook in broth, spoon over chicken on platter. If broth isn't thick enough add a little flour.
HINT- it is not necessary to chop up the carrot, celery, onion. Just throw them in the pot. I don't peel the onion, the skin colors the broth. This is all just for flavor, you will not be serving with the chicken.
