     Italian Bean Pasta Salad

Ingredients
12 oz med shell pasta (12 oz = 1 1/2 c)
2 1/2 c chopped plum tomatoes
3/4 c diced green pepper
3/4 c diced red onion
2/3 c canned red kidney beans drained and rinsed
2/3 c canned black beans drained and rinsed
2/3 c canned chick peas
1/2 c feta cheese crumbled
1/3 c fresh basil or parsley optional
 
Dressing
1/4 c fresh lemon juice
3 T olive oil
1 T balsamic vinegar
2 tsp fresh minced garlic
2 1/2 tsp dried basil
1 1/2 tsp dried oregano

Instructions
Cook pasta. Rinse with cold water. Drain well an place in a lg bowl.
Add tomatoes green pepper onion beans pasta and cheese and basil
Combine dresing ingredients and pour over. Best if can be made a day ahead. Serve at room temp.
This salad is great. 12 oz pasta = 1 1/2 c or a little more dry. Double everything if you want to use full cans of beans otherwise combine left over beans and freeze for use in next salad or chili. Have also put in corn.
