     Wild and Brown Rice Salad w Dried Fruit and Pecans

Ingredients
3/4 c wild rice
3/4 c brown rice
4 c veg or chicken stock
1/2 chopped peans toasted
1/3 c chopped green onions
1/3 c dried cranberries
1/3 c chopped apricots
1/3 c parsley
 
Dressing- make 1/2 a batch more as it is a little dry as is
1 T olive oil
1 T orange juice concentate (froze)
1T fresh lemon juice
2 tsp soy sauce
2 tsp balsamic vinegar
1 1/2 tp sesame oil
1 tsp minced fresh garlic

Instructions
Combine the wild and the brown rice with stock in a sauce pan. Bring to a boil reducing heat to a simmer cover and cook for 35 to 40 min or jut till tender. Drain off excess liquid. Place in a lg serving dish and set aside to cool.
Stir in pecans green onion cranberries apricots and parsley into cooled rice.
Whisk together dressing ingredients and pour over salad to coat.
