1/2 cup chopped flat - leaf parsley or sub a little dried
Salt, pepper and garlic salt
Instructions
Season ground beef with salt, pepper and garlic salt to taste. Add
onions and garlic. Cook until beef is well browned. Drain if
needed.
Stir in the tomatoes and oregano. Bring to a simmer over high heat.
Stir in broth, carrots, celery and barley. (If using dried parsley,
add it now) Return to a simmer. Lower the heat and simmer for 1 hour
or until barley is tender. Stir in the parsley.
Serve with grated parmesan cheese if desired.
