     Chocolate Zucchini Muffins

Ingredients
2 cups flour
1/2 teaspoon salt
1-1/2 teaspoon cinnamon
1 teaspoon baking soda
1 cup brown sugar
3 eggs
3/4 cup coconut oil or applesauce
2 cups of shredded zucchini, double chop with food processor
1 teaspoon vanilla
 
4 ounces chocolate, melted

Instructions
1. In a medium bowl combine flour, salt, cinnamon and baking soda. Mix and set aside. In the bowl of your stand mixer, beat eggs and sugar together on a medium speed for one minute.
2. Slowly add oil while the mixer is on. Add the shredded zucchini and vanilla, and continue mixing. Turn the mixer to low and slowly add the dry mixture.
3. Add the melted chocolate and mix until all the ingredients are combined. Divide the batter between greased muffin tins. Bake at 350 for 20-23 minutes, until a toothpick inserted in the center of a muffin comes out clean.
