     Black Bean Burritos

Ingredients
2 (10 inch) low-carb flour tortillas
2 T veg oil
1 small onion, chopped
1/2 red bell pepper, chopped
1 tsp minced garlic
1 1/2 cups black beans, cooked beforehand
1 tsp minced jalapenos
3 oz vegan cream cheese
1/2 teaspoon salt
 
2 tablespoons chopped fresh cilantro

Instructions
Place onion, bellpepper, garlic, and jalapenos in pan. Cook 2 min, stirring occasionally. Pour beans into skillet, cook 3 min. Cut cream cheese into cubes and add to skillet with salt. Cook 2 min. Stir cilantro into mixture. Spoon mixture evenly down center of warmed tortilla and roll tortillas up. Serve immediately
