     Crêpe Susette

Ingredients
1/4 Pint Milk
1/4 Pint Cold water
3 egg yolks
1 Tbsp Sugar
3 ornge liqueur
5 oz Flour
2 1/2 melted butter
2 oranges
4 limps of sugar
 
2 Tbsp Softend butter
1 Tbsp Marmelade
2 Tbsp Orange liqueur
3 Tbsp Cognac if you want to flambee it

Instructions
Place all ingredients in liquidizer blend for 1 min. Put in fridge for 2 hours, or over night For filling rub sugar limps over oranges to absorb oil Grate peel of 1 orange Mash sugar lumps add orange peel, butter & liqueur Peel oranges with sharp knife so none of the white skin is left, then cut slices out of orange again with out the thin white skin. Put orange aside for later Squeeze the pulp of the left bits of orange in the mixture Spread mixture over crepes fold in quarters Arrange in oven greased proved dish, if mixture is left over drizzle over crepes cover with foil put in preheated oven at 180 c for 15 mins, Arrange orange slices on top pour warmed cognac over and set alight with match. Will only burn if cognac has high alcohol content, if you don' t want to set it alight don't bother with the cognac!
