Ingredients
4-5 pounds chuck pot roast
1/3 cup apple cider vinegar
4 teaspoons minced garlic
4 teaspoons cumin
2 teaspoons dried oregano
1 teaspoon ground black pepper
1 teaspoon salt
4-5 chipotles in adobo (to taste)
3 tablespoons lime juice
 
3 bay leaves
3/4 cup chicken stock

Instructions
Cube the meat into large cubes/chunks. Sear on all sides in a frying pan (in 1-2 tbs of oil). Add meat to slow cooker.
While the meat is browning, blend the vinegar, chipotles, lime juice, cumin, oregano, garlic, pepper, and salt. Pour into the slow cooker over the meat. Then add chicken stock and bay leaves. Cook on high for 6 hours or low all day long (8-10 hours).
When the meat is soft and tender pull it apart using two forks to give a nice shredded look. Serve in taco or burrito styles with cheese, beans, lettuce, salsa and other toppings you prefer.
Serving Suggestions
I like a simple soft taco with cheese and barbacoa. A brown ale is a tasty beverage to complement the dish.
