     MUSHROOM BHAJI

Ingredients
170g/6oz potatoes
1 onion
1 garlic clove
113ml/4fl oz stock made with Chicken Bovril or Vecon
2 tsp garam masala
227g/8oz open cap mushrooms
3 tomatoes
 

Instructions
1. Peel and cube the potatoes, quarter and slice the onion, peel and crush the garlic. Place in a saucepan along with the stock and garam masala and bring to the boil. Reduce the heat, cover and cook for 10 minutes. 2. Wipe and slice the mushrooms, deseed and chop the tomatoes and stir them into the pan. Re-cover and simmer for a further 15 minutes until the vegetables are tender
