Grind 1/4 c. of the oats and all of the cashews into a food processor. Add all remaining ingredients except raisins. Spoon in the raisins. Mix well and roll into about 10-12 balls. Refrigerate overnight. Best served at room temperature.
Each cookie has about 80 calories... delicious enough to eat for dessert, and nutritious enough to eat for breakfast!
