     Bran Muffins

Ingredients
2 c. boiling water
2. All Bran
1 c. margarine or butter, softened
3 c. sugar
4 eggs
1 qt. buttermilk
1 T. salt
5 tsp of soda
5 cups flour
 
5 c. Bran Flakes
3-4 cups raisins, if desired

Instructions
Mix water and bran together; set aside. Using ENORMOUS bowl, cream together butter, sugar and eggs. Add buttermilk and then soaked bran mixture. Sift dry ingredients (salt, soda, and flour) into mixture. Add cereal flakes and raisins, folding to mix This will make enough batter for 4 dozen muffins; it will keep in the refrigerator for 6 weeks (bake as needed/wanted).
Bake in greased muffin tins (I use pan or muffin papers) for 15min. at 400 F.
