Ingredients
4 eggwhite
1 cup (215) caster sugar
1tbs cornflour
2tsp orange blossom water or vanialla
1 pink grapfruit, peeled
1 orange, peeled
1 lime, peeled
1/4 cup (55g) caster sugar, extra
creme fraiche, to serve
 

Instructions
Preheat oven to 120C. Line an oven tray with baking paper. Use an electric mixer to beat eggwhites in clean, dry bowl until soft peaks form. Add the sugar, 1tablespoonful at a time, bearing well between each addition. Continue beating untile sugar dissoles and mixure is thick and glossy. Add cornflour and half the orange blossom water or vanilla and use a metal spoon to fold until lust combined.
Spoon 4 portions of mixure onto the tray use a knife to smooth the surface.
backe for 1 hour or until dry on the surface. turn the oven off and set aside, with the door ajar, for 1 hour or until cooled to room temperature.
4 and 5 spets can be your own
