     Vegetarian Chili

Ingredients
1 TBLS olive oil
1 cup green pepper chopped
1 cup orange or red pepper chopped
2 cups chopped onion
1 cup sliced mushrooms
3 garlic cloves, minced
4 cups of water, divided
1 1/2 cups corn kernels, frozen or canned, drained & rinsed
2 TBLS. sugar
 
2 TBLS. chili powder
2 TBLS. Worcestershire sauce
2 cans (14.5oz.) unsalted diced tomatoes, undrained
1 can (15 oz.) black beans, rinsed & drained
1 can (15 oz.) cannelli beans or white beans, rinsed & drained
1 can (6 oz.) tomato paste
1/2 cup (2 oz.) reduced fat shredded cheddar cheese (optional)

Instructions
Heat oil in a large pot over medium-high heat. Add peppers, onion, mushrooms and garlic; saute for 3 minutes or until tender. Add 3 cups of water, corn sugar, chili powder, worcestershire sauce, tomatoes, black & white beans and stir to combine.
Combine remaining cup of water and tomato paste in a bowl, stirring with a whisk until blended. Stir tomato mix into bean mixture. Bring to a boil, then reduce the heat and simmer for 5 minutes or until thoroughly heaated.
Serving Suggestions
Ladle soup into bowls. Top with cheese if desired.
