     Buffalo Chicken Quinoa Bites

Ingredients
1 cup cooked quinoa
1 large egg
1/4 c grated onion
1 cup shredded cooked chicken
1/4 c buffalo wing sauce (we like Frank's)
1/2 c shredded mozzarella cheese
1/2 c panko bread crumbs
1/2 tsp minced garlic
Salt and pepper to taste
 

Instructions
Preheat oven to 350 degrees.
Mix together all ingredients. Stir well to combine.
Put about 1 heaping tablespoon of the mixture into each cup of a greased mini muffin tin, filling it to the top. Press down gently to compact. Bake for 25-30 minutes. Serve with bleu cheese or ranch dressing, celery sticks, and carrot sticks.
