     Tex-Mex Tater Salad

Ingredients
8 russett potatoes, peeled & cubed (cooked)
1-1/2 c. shredded cheddar cheese
2/3 c. black beans, rinsed & drained
2/3 c. chopped red bell pepper
1-1/2 c. chopped celery
1-1/3 c. chopped green onions
1 T. cilantro or parsley
2 c. sour cream
1/2 c. ranch dressing
 
1-1/2 c. medium chunk salsa
salt/pepper to taste

Instructions
In a lg bowl, combine the spuds, cheese, beans, bell pepper, celery, onions and cilantro. In a small bowl, combine sour cream, salad dressing, salsa and salt/pepper. Pour sauce over spuds mixture and toss to coat. Cover and chill for at least 1 hour. For some more heat, add a touch of cumin powder, crushed red pepper and a dash of garlic.
