     Louisiana Cajun Shrimp with Chipolte Mayo

Ingredients
1 lb medium shrimp
2 tbsp olive oil
1 tbsp Cajun seasoning
1/2 tbsp chipolte peppers in adobe sauce, finely chopped
1/2 tsp brown sugar
Salt and pepper for seasoning
Chipolte Mayo
1 c mayo
 
3 canned chipoltes in adobo sauce
1 tbsp adobo sauce
1/2 lime juice
Add all ingredients in food processor and blend.

Instructions
Toss shrimp with olive oil, Cajun seasoning, brown sugar and chopped chipoltes in adobo sauce and wix well to coat shrimp. Cover and refrigerate for 30-60 minutes. Preheat oven to 350. Spread out marinated shrimp on foil lined baking sheet and season with salt/pepper. Bake until shrmp turn pink about 10-15 minutes.
