Ingredients
Cajun Spice Mix-
1/2C. Sweet paprika
2 1/2 Tbs. Cayenne pepper
2 1/2 Tbs. Garlic powder
1 1/2 Tbs. Ground black pepper
1 1/2Tbs. Ground white pepper
1Tbs. Dried thyme
1Tbs. Dried Oregano
1Tbs. Salt
 
Cajun Sauce-
1/2C. Cajun Spice Mix
12oz Dark Beer
2C. Heavy cream
1/2Tsp. Red pepper flakes

Instructions
In a large heavy saucepan, mix the cajun spice mix and beer. Cook over medium heat, stirring constantly with a wire whisk to make a thick paste. Do not allow the mixture to burn.
Gradually stir in the cream to make a smooth sauce. Cook over medium heat, stirring occasionally for 8-10 minutes or until the sauce thickens slightly and turns a rich rust color.
Serving Suggestions
Serve with sliced Baguette
